China White Monkey (Bai Hou)

China White Monkey or Bai Mao Hou is a green tea that grows along the slopes of the Taimu mountains on the Qinshan plantation located in the Fujian province of China. Like most green teas grown in Fujian, the best lots are harvested in early April during the pre-Qing Ming, the first harvest of the year.
The young leaves and unopened buds are hand-picked and processed from a small farm. The result is a tea that appears intricately woven with large and beautiful white tips looking like white-haired monkey paws, hence the name (this lots is a 50-50 mix of green leaf, and white bud). White Monkey produces a delicately sweet, light nutty flavor, with a dry finish. Subtle seaweed notes can be found. Enjoy!
